English Muffin Pizzas – Pesto Chicken with Spinach and Artichokes

Delicious, healthy homemade pizzas. These pizzas are perfect for your craving, but keep it healthy too! These toppings are great for getting protein and vegetables for a healthier pizza alternative.

Ingredients

  • 6 Muffins = 12 Mini Pizzas
  • 3/4 cup (180g) basil pesto
  • 6 oz chicken breast (already cooked)
  • 1 cup spinach
  • 1/2 cup artichoke hearts (*note below*)
  • 4 oz fresh mozzarella cheese
  • 1/8 cup fresh parmesan cheese

Instructions

  1. Preheat oven to broil.
  2. Halve muffins and line on a baking sheet.
  3. Spread with basil pesto, spinach, chicken, artichokes, and then top with cheese.
  4. Broil in oven until cheese bubbles - check frequently so you don't burn them,

Notes

Fresh artichokes are a lot of work for a small amount. Use jarred/canned in water for an easier fix.
