Jennifer & Marc from our gym are growing eggplants and were kind enough to share! We decided to play in the kitchen and made sausage stuffed eggplant topped with parmesan cheese. This was a chance for us to get creative and we were not sticklers about weighing and macros for this particular recipe. The nutrition facts are ball-parked below in the recipe and it is a higher fat, lower carb meal. We did drain the fat from the sausage which makes the meal leaner and you could add cooked rice to the mixture if you want to increase the carbohydrates. We paired it with Malbec!
Sausage Stuffed Eggplant with Parmesan

The calories and macros are not super accurate for this recipe. We did not weigh the eggplant before cooking and we did drain the excess fat from the sausage (without calculating the decrease in fat).
Ingredients
- 1 Eggplant
- Olive Oil
- 1/2 lb Mild Italian Sausage
- 1 Egg
- 1/2 Cup Tomato Sauce
- 4oz Parmesan Cheese
- 1 TBSP Minced Garlic
- Salt
- Pepper
Instructions
- Preheat oven to 400F
- Cut eggplant in half and rub outside of eggplant with olive oil
- Roast eggplant on baking sheet for 30 minutes - cut side up
- On stove-top, cook 1/2 lb mild Italian sausage until brown - drain fat and put sausage in bowl
- Add 1 beaten egg, 1/2 cup tomato sauce, 1 T minced garlic, salt and pepper to sausage
- Hollow inside of cooked eggplant and roughly chop
- Add chopped eggplant to sausage mixture
- Spoon mixture back into hollowed eggplant shells
- Top with sliced parmesan cheese
- Bake in oven on 400F for 30 minutes or until cheese is brown and bubbly
